To create a crispy outer layer that locks in moisture inside, use the deep-frying method—fully submerging the food in hot oil so it is completely surrounded during frying. This technique, combined with pressing and flipping in the oil, helps achieve a crispy outside and soft, juicy inside texture.
- Prepare the red sausages. You may choose to score (make small cuts) or leave the ends uncut.
- Heat a pan with enough oil to fully submerge the sausages. Use medium heat at 160–180°C. Be careful not to overheat the oil, as it may make the sausages too firm and tough.
- Once the oil is hot, add the sausages in a quantity appropriate for the pan and oil level. Overcrowding the pan may cause excess oil absorption, which can prevent proper puffing.
- While the sausages have not yet puffed, continuously press them down so they remain submerged in the oil and flip them frequently. This pressing helps release excess oil, ensures even cooking, and allows them to gradually puff up without becoming greasy.
- Continue pressing and flipping until the sausages are well-puffed and no longer shriveled. Then you can leave them in the oil and return to press them occasionally until 15 minutes is reached.
- After 15 minutes, remove the sausages from the oil. You will get beautifully puffed red sausages that are crispy on the outside and soft on the inside, ready to serve.
